Spinach lasagna roll ups

Ingredients

  • 1 Cup pasta sauce

  • Lasagna noodles (brown rice pasta)

  • 1/2 Cup parmesan cheese

  • 15 Ounces ricotta cheese

  • 125g Spinach

  • 1 Large egg

  • 1/2tsp Salt

  • 1/2tsp Black pepper

  • 9tsp Mozzarella cheese

Instructions

  1. Preheat oven to 350 degrees fahrenheit

  2. Ladle 1 cup of pasta sauce on the bottom of a 9x12 baking dish

  3. Cook noodles according to package directions then drain

  4. Cook down spinach and squeeze well

  5. Combine spinach, ricotta, parmesan, egg, 1/2tsp of salt and black pepper in a medium bowl and mix

  6. Take one noodle and spread 1/3 cup ricotta mixture evenly over noodle. Roll carefully and place seam side down onto backing dish. Repeat with remaining noodles

  7. Ladle remaining sauce over noodles and top each one with 1tbsp of mozzarella cheese. Place foil over baking dish and bake for 40 minutes.

  8. To serve, ladle a little sauce on the plate and top with lasagna roll
